Pumpkin Spice Waffles with Cinnamon Whipped Cream

Who's ready for another festive,
pumpkin spice recipe? I know I am! One of my favorite things about food when it
comes to autumn is the use of pumpkin and cinnamon and extra sweetness in
everything.
In addition to these delicious waffles, be sure to make some coffee and
flavor it with InternationalDelight® Peppermint Mocha Coffee Creamer for the perfect
holiday taste. I made my coffee in our french press (a super easy method I
will share below) and it had the tastiest holiday flavor with the
Peppermint Mocha creamer.
You can get these creamers at Walmart in
the refrigerated section!
Pumpkin Spice Waffles with Cinnamon Whipped Cream

Ingredients (2 Large Waffles)
- 2 cups Waffle or Pancake Mix
- 1/4 tsp cinnamon
- 1 egg
- 1 cup International Delight® Pumpkin Pie Spice creamer
- 1 cup pureed pumpkin (canned pumpkin)
- 2 Tbs melted butter, cooled
- 1 cup heavy cream
- 1/4 tsp cinnamon
- 1 tsp vanilla extract
- 1 Tbs powered sugar
Instructions:
For the Waffles
Heat waffle iron.
Whisk together the wet ingredients and add them to the dry ingredients. Whisk until smooth.
Pour the mixture into the waffle maker and cook according to the iron directions.
For the Whipped Cream
Whip the heavy cream until there are stiff peaks with a whisk or electric mixer.
Add the cinnamon, vanilla, and powdered sugar and whisk until stiff peaks form. Use immediately and refrigerate any leftovers.
For the coffee, grind 3 tbs of coffee beans on a coarse grind setting
and place in your French Press. Add hot water (203-204 degrees) and let steep
for 3 minutes. After steeping, slowly plunge the filter down until your reach
the bottom. Pour a cup of coffee, add Peppermint Mocha creamer and enjoy!
