Oh boy, am I excited for this recipe today. The weather is getting colder and colder but that doesn't mean you can't start your day with a little heat! Mark and I love eating breakfast together on the weekends, especially when we have the morning free. The last few weekends have been really chilly, so we'll find something good to watch on tv, make a warm breakfast, and cuddle under our favorite blankets. Its the best way to start our weekend!

I'm teaming up with MorningStar Farms® to showcase their new MorningStar Farms® Chorizo Crumbles that I picked up at Walmart, sharing ways that you can create some simple + delicious, meat-free dishes.

One thing I've always loved about MorningStar Farms is that they offer "as-is" meal solutions for vegetarians and vegans, meaning I can just cook it straight from the bag and enjoy! Morningstar Farms also knows that sometimes “Less is More;” so these new items have no artificial colors or flavors, and the chorizo crumbles are completely vegan. 




Because of the eggs this recipe isn't strictly vegetarian/vegan, but it makes a great stride towards enjoying a meat-free option of veggie cuisine! I know that I'll definitely be repeating it multiple times this month- its that good!

Another thing that I love about the Chorizo is that its already flavored and ready to go after cooking, so the recipe is super simple! It takes less than 15 minutes to make. Yes please!

Winter Breakfast Bowl

Prep Time: 5 mins
Cook Time: 10 mins

Ingredients (serves 2)
    For the Eggs
    • 4 Large Eggs
    • 1/4 cup of milk or cream (I used unsweetened almond milk)
    • Salt
    • Pepper
    • 1 small shallot
    For the MorningStar Farms Chorizo
    • Cook according to package instructions (method in a frying pan is preferred!)
    For the toast
    • Fresh baked sourdough bread
    • Butter
    Instructions
    For the Eggs
    In a medium bowl, whisk together the eggs, salt, pepper, and milk until thoroughly combined.
    Dice shallot and add to eggs.
    Spray a large frying pan with non-stick cooking spray.
    Place over medium heat and add butter.
    When butter is melted, add the egg mixture.
    With a rubber spatula, slowly move eggs around in the pan to prevent sticking and to "scramble" for about 4 minutes.
    For the Chorizo
    Follow the package instructions for the frying pan method.
    For the toast
    Slice your bread thinly and toast for about 2 minutes.
    Add your favorite toast toppings like butter or avocado!
    Toppings
    You can add additional toppings to your bowl when your finished assembling it. My favorites are avocado and nutritional yeast (vegan cheese option).
