Apple Walnut Pancakes (Dairy Free!)

This last weekend my husband and I went apple picking with some friends and came home with 14 pounds of apples! I've been trying my best to find a collection of apple recipes and I think I've compiled enough to use up all the apples (probably making us sick of apples) within the next week or two. Also, fun fact, I'm allergic to raw apples so all these recipes I'm trying out include cooked apples (although I wish I could have salads with apples and caramel apples...yum!)


This morning I decided to try my hand at some pancakes. Not just any pancakes, mind you, but delicious cinnamon apple vanilla walnut pancakes. YUM! Keep scrolling for the recipe, and try not to droll over the photos :)












Apple Walnut Pancakes

Ingredients (5-7 pancakes)
    Dry Ingredients
    • 1 cup Pancake Mix
    • 1 tsp Baking Powder
    • 1 Tbsp Brown Sugar
    • 1 tsp cinnamon
    • Handful of Walnuts
    Wet Ingredients
    • 1 egg
    • 1/2 cup almond milk
    • 1/2 tsp vanilla extract
    Add Ins
    • 1 peeled, cored, and chopped apple
    • powdered sugar
    Syrup
    • 1 tsp vanilla extract
    • 1/2 cup maple syrup
    Instructions:
    Whisk together dry ingredients in a large bowl.
    Whisk together wet ingredients in a different bowl and then add to the dry ingredients. There may be some lumps.
    Fold in apple chunks.
    Preheat your skillet/griddle to medium heat and drizzle with 1 tsp. vegetable oil.
    Using a 1/4-cup measure, scoop batter onto warm skillet. Cook for 1 to 2 minutes until small bubbles form on the surface of the pancakes, and then flip.
    Reduce the heat to medium-low and cook on the opposite side for about 2 minutes, or until golden brown.
    Repeat the process with the remaining batter, adding more oil to the skilled when needed. Serve immediately.
    Stir together the syrup and vanilla and drizzle over the pancakes. Dust with powdered sugar and cinnamon (optional).
