A recipe for delicious cookies!

I got this recipe from Kevin & Amanda, and boy are they good!

Mascarpone Oreo Snowflake Cookies

*Perfect for the dessert table at your holiday party*

What you'll need:
1 cup butter
3 oz mascarpone cheese
1 cup sugar
1 egg yolk
2.5 cups flour
1 tsp vanilla
5-7 crushed Oreo cookies

-Preheat oven to 325 F. 
-Cream the butter and mascarpone cheese  for about 3 minutes. Slowly beat in the sugar until light and fluffy. 
-Beat in the egg yolk and vanilla, then slowly beat in the flour until mixed. 
-Stir in crushed Oreo cookies. 
-Scoop or spoon cookie dough on to a cookie sheet and bake at 325 degrees for 12-15 minutes.

For today, I would like to express appreciation to my school, Valley Forge Christian College. When I first started there 2 and a half years ago, I wasn't too sure if I'd like it. Then personal finance issues appeared and I just wanted to quit. But I felt like God was calling me to stay there, that it was a part of His plan for my life. So I stayed and I prayed for guidance and financial provision. Trust me, stuff like that reaaalllyyy helps you grow. 
Now, it is the middle of my third year and I cannot believe where the time went! I am learning so much with my major and from my professors, I am so excited to be able to use these things in the future. Psychology can be pretty tricky and has a ton of information to learn in every class, but I think I've finally learned how to make enough time to study and get work done before the very last minute. 
Anyway, VFCC is pretty nice for small colleges. I've decided to look at the good in each situation so it makes my college experience a lot more enjoyable when it comes to class, chapel, and finances. I am so thankful for the opportunity to attend there and to meet all the people I've met and be a part of such a great ministry team (Inspire India). God is so good, even in the small things!
Also, we just celebrated our 75th anniversary so the campus has been extra festive this year.
